Ingredients
Crispy Falafel
  • 2 cups dried chickpeas
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3/4 cup flat-leaf parsley leaves
  • 1/4 cup cilantro leaves
  • 1 Tbsp. chickpea flour
  • 2 tsp. ground cumin
  • 2 tsp. ground coriander
  • 1 tsp. ground black pepper
  • 1/2 tsp. cayenne pepper
  • 1 1/2 tsp. sea salt
Tahini Sauce
  • 1/4 cup tahini
  • 1 tsp. maple syrup
  • 1/2 lemon juice
  • 2-4 Tbsp. water
  • pinch of sea salt

Instructions
Falafel
  1. Place dry (unsoaked, uncooked) chickpeas into a big bowl, cover them with cold water, and let them soak for 24 hours. Once soaked, drain and rinse the chickpeas.
  2. Place all the ingredients into a food processor and pulse until the chickpeas are finely minced. Do not over-pulse – the mixture should be coarse, not smooth/paste-y,
  3. Using your hands, shape the falafel mixture into small balls (about 1.5″ in diameter). Arrange about 9 falafel balls in a single layer in your air fryer basket and air-fry for about 15 minutes.The falafel is done when it’s golden brown and crisp. Store the falafel in a warm place until ready to serve.
Tahini Sauce
  1. Mix the tahini, maple syrup, lemon juice, and salt in a small bowl. Add 1 Tbsp. of water at a time to reach the desired consistency.
