Ingredients
Crust
  • 2 cups rolled (or quick) oats
  • 1 cup natural roasted peanut butter
  • 1/2 cup brown rice syrup
  • 2 Tbsp. coconut oil, melted (optional)*
Filling
  • 3/4 cup strawberry jam (I use sugar-free)

Instructions
  1. In a large bowl, mix together the oats, peanut butter, brown rice syrup, and coconut oil (if using). You can also use a food processor to do this step. Your dough should be clumping together into one ball.
  2. Line a glass square dish with a piece of parchment parchment (this will make it easier to pull out the bars when you’re ready to slice them). The size of the dish will depend on how thick or think you want the squares to be. I used 7″x 7″ dish.
  3. Take 3/4 of the mixture and press it firmly into the parchment paper-lined dish. Reserve the 1/4 of the mixture for topping.
  4. Once the 3/4 mixture is pressed, spread the strawberry jam on top of it into an even layer.
  5. Finally, crumble the remaining 1/4 of the mixture on top of the jam layer, Place the dish into the fridge for at least an hour to firm up before cutting into squares.
Recipe Notes

*I only use the coconut oil if the crust is too dry and the ingredients don’t hold together very well. This depends on the type of peanut butter you use. Some brands are more liquid-y while others are drier. If possible, choose the runnier consistency so you can omit the oil.
