Ingredients
Cacao Truffles
  • 2 cups Medjool dates, pitted
  • 3 Tbsp. cacao powder, divided
Acai-Coconut Truffles
  • 2 cups Medjool dates, pitted
  • 2 Tbsp. acai powder
  • 1 Tbsp. desiccated coconut, unsweetened
Chocolate Truffles
  • 2 cups Medjool dates, pitted
  • 2 Tbsp. cacao powder
  • dark chocolate, tempered (for dipping)

Instructions
  1. Into a high-speed food processor, add the dates and 2 Tbsp. cacao/acai powder and process the ingredients into a very smooth paste. You might need to use a spatula to scrape the mixture down as you blend.
  2. Using a spoon, scoop out mixture and roll it into balls. The “dough” will be very sticky so wet your hands to make the rolling easier.
  3. Add 1 Tbsp. of cacao powder/coconut/melted dark chocolate into a small bowl and coat the truffles evenly. Place the finished truffles on parchment lined baking sheet.
  4. Store the truffles in an air-tight container in the fridge for up to 1 week or the freezer for 3 months.
Recipe Notes

*If using Deglet Nour dates, soak them in warm water  for 10 minutes so they soften up. Then dry off the dates thoroughly.
