Pico de Gallo (Salsa Fresca)

Fresh, crisp, and so flavorful pico de gallo (also known as salsa fresca) is a popular Mexican side dish that goes really well with corn chips and guacamole.
Servings: 2 cups
  • 6 plum tomatoes, chopped
  • 1/4 white onion, finely chopped
  • 1-2 jalpeño pepper
  • 1/4 cup cilantro, finely chopped
  • 1/2-1 lime, juice only
  • 1/2 tsp. fine sea salt
  1. Chop the jalapeno pepper: slice the pepper in half and taste one of the seeds for heat. If the pepper isn't too hot, finely mince it. If it's very hot, remove the seeds and membrane, and then mince it. 

  2. Combine all the ingredients in a bow. Taste and adjust the salt, lime juice, and cilantro.

  3. Store leftover pico de gallo covered in the refrigerator for a few days, though best when fresh.
